    About this recipe: Cauliflower and broccoli cheese. This dish goes really well with roasted chicken. When the chicken comes out of the oven, you can pop in this dish while the chicken rests.

    Serves: 4 

    • 1 large cauliflower, leaves cut off, broken into pieces
    • 1 large head broccoli, broken into pieces
    • 500ml milk
    • 4 tablespoons plain flour
    • 50g butter
    • 100g strong Cheddar, grated
    • 2 to 3 tablespoons breadcrumbs (optional)

    1. Preheat the oven to 220 C / Gas 7.
    2. Bring a large saucepan of water to the boil, then add the cauliflower and broccoli and cook for 5 minutes - lift out a piece to test, it should be cooked. Drain the cauliflower and broccoli, then tip into an ovenproof dish.
    3. Put the saucepan back on the heat and add the milk, flour and butter. Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 minutes while the sauce bubbles and becomes nice and thick. Turn off the heat, stir in most of the cheese and pour over the cauliflower and broccoli. Scatter over the remaining cheese and breadcrumbs.
    4. Bake for 20 minutes until bubbling.

    Triffic recipe, increased the cheese to 200 grams for a cheesier sauce  -  31 Jan 2015


    Very easy to make. At first I didn't think there was enough cheese sauce as it only just covered the broccoli and cauliflower. But once it had been in the oven for 15 mins it was really moist. We had this as midweek main meal with a salad.  -  07 Sep 2015
