    About this recipe: Sticky yummy pork loin to serve with veg, rice or noodle, an easy, versatile family favourite! It's inexpensive and a doddle to cook.

    Ingredients
    Serves: 4 

    • 1 tablespoon butter
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon mustard (English, Dijon or wholegrain)
    • 1 tablespoon marmalade or maple syrup
    • 4 pork loin chops or medallions

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix the butter, Worcestershire sauce, mustard and marmalade in a small jug. Heat gently in the microwave until the butter has melted; whisk until well blended.
    3. Score both sides of the pork with a sharp knife (about 5 times each side) and place into an ovenproof dish; using a pastry brush, coat both sides of the pork pieces generously with the marinade.
    4. At this stage, you can either put the pork straight into the oven (Preheat the oven to 180 C / Gas 4.) OR you can place the pork into the fridge for an hour to marinate (either way works just as well but the pork stays a little more moist if you marinate).
    5. Bake in the preheated oven for 1hr to 1hr 15 minutes.
    6. As the pork is cooking, turn the pieces every 20 min, coating with the remaining marinade. The marinade will begin to lightly char on the edges of the meat; this is the way I know it's cooked.
    7. Serve while hot; great with creamy mashed potatoes and veg or sliced up onto rice or noodles.

    Made it for the kids tea and they loved it! Swapped the marmalade for honey, overdid the microwave part and then forgot to keep turning it over, but it was great all the same. I did as suggested and stuck it in the fridge for an hour, and it was lovely and tender. Easy for the little ones to cut up on their own. Served it with packet savoury rice (lazy i know, but when you're not feeling great.....),they mopped up any remainder with bread and butter and had exceptionally clean plates. We've had a request for it again - 12 Aug 2013

    I made extra marinade but altho the loins were nice enough they were dry and I cooked them for less than time stated-my oven dish is ruined too 😔 - 22 Jan 2016
