Chilli, garlic and ginger mussels

    Serves: 6 

    • 2kg rope-grown mussels
    • 2 chillies, mix up the colours, chopped
    • thumb-sized piece root ginger, grated
    • 1 garlic clove, crushed
    • 6 rashers smoked bacon, chopped
    • 200ml creme fraiche
    • 1 pinch salt
    • 1 handful pink peppercorns, crushed
    • 50g butter
    • 75ml good dry cider
    • 1 pack bruschetta breads

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Debeard the rope-grown mussels.
    2. After chopping and grating and crushing, put all ingredients except the bread in a frying pan and cook on a med/low heat.
    3. Cook breads on a griddle pan or fry for 2 minutes.
    4. Place the breads in a serving dish and pour in mussels to serve.
