Easy slow cooker chicken stock

    Chicken stock can't get easier than this! Just take your roast chicken leftovers and throw everything in the slow cooker - hours later you'll be rewarded with a rich stock without any effort.

    Makes: 2 litres stock

    • leftover carcass from 1 whole roast chicken
    • 2 sticks celery, chopped
    • 2 carrots, chopped
    • 1 onion, skin on, quartered
    • 1 bay leaf
    • 1 teaspoon fennel seeds
    • 1/2 teaspoon dried chilli flakes
    • 5 black peppercorns
    • 1 sprig fresh thyme
    • 2 litres water

    1. Combine all of the ingredients in a slow cooker. Cook for 8 hours on Low. Strain stock through a fine sieve, then chill or freeze till needed.

    Freezing tip

    Chicken stock can stay in the freezer for months. Try freezing in an ice cube tray or in small freezer bags for easy-to-use portions.
