About this recipe: These biscuits are easy to make. I make them in a wood burning stove, but in the summer I use a conventional oven.

Makes: 30 

  • 100g plain flour
  • 1 pinch salt
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon mixed spice
  • 50g margarine
  • 50g icing sugar
  • 2 tablespoons golden syrup
  • 1 tablespoon black treacle

Prep:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Preheat the oven to 200 C / Gas 6. Line 2 baking sheets with greaseproof paper.
  2. Sieve together flour, salt, bicarbonate of soda, baking powder, ginger and mixed spice.
  3. Rub in margarine to make breadcrumbs.
  4. Add icing sugar.
  5. Warm syrup and treacle in microwave about 10 / 20 seconds and add to dry ingredients mix to dry consistency.
  6. Roll mix into small balls and flatten with hand, or use a small rolling pin, then cut out with 4cm cutter. Spread out on baking sheet.
  7. Bake for 8 minutes. Cool for a few minutes before lifting onto wire rack. Store in airtight tin.

I love!! I have to say, I did doubt the recipe at first. Only liquids being golden syrup and treacle? Icing sugar? But, I was pleasantly suprised, this recipe is GOOD. Really good. Fantastic. Probably THE best gingernut recipe i've found. A nice crunch, with a chewy center, melts in the mouth, and flavour to drool for. Yum!!! The spices in it are fantastic and just the right amount - but still, a teeny weeny (hardly) bit strong on they're own, so one of these delicious gingernuts with a nice cuppa or some milk = heaven Infact, its so good, I am actually going to copy it into the family cookbook, which my great grandmother started!! Yes. Its that good. I've just read through the reveiw - its so POSITIVE. Now I need to think of something to moan about..... The weathers awful today. Oh! Recipe related!! Right. Well, the only downside I can think of was that they didnt quite make 30 for me. That might just be how I did it though. So, when you (have to) make this recipe, be sure to do them nice and thin and small too, as they rose and spread more than I expected. A must-bake for all. Simple to follow recipe, quick and easy, and cooking time is short so you wont have to wait to long to get your hands on these!! Yum!! So overall - I think a well deserved 5 star!! Delicious biscuits I would double the the amounts they get eaten quickly just be careful adding the liquid I didn't the full amount about 2/3 - 03 Jul 2013
