Pistachio and peanut butter cookies

    Soft and chewy nutty cookies, drizzled with melted milk or white chocolate. Very easy to customise.

    Makes: 9 Aprox

    • 90g (3oz) self-raising flour
    • 90g (3oz) porridge oats
    • 90g (3oz) caster sugar
    • 1 handful roughly chopped pistachio nuts
    • 1 handful dried fruit
    • 90g (3oz) butter
    • 2 tablespoons crunchy peanut butter
    • 2 tablespoons golden syrup
    • 2 tablespoons milk
    • 50g chocolate (milk or white)

    1. Preheat oven to 190 C / Gas 5.
    2. Sift all flour into a bowl and add oats, sugar, pistachio nuts and fruit. Mix thoroughly.
    3. In a pan, melt butter, peanut butter, golden syrup and milk until runny. Once melted, pour into bowl with dry ingredients.
    4. Mix until all evenly distributed until mix looks like flapjack mix. Use hands to take golfball sized balls of mixture and roll in hands.
    5. Place balls onto baking sheet and gently flatten until 1cm thick. Repeat for all of mixture.
    6. Bake in the preheated oven until until slightly golden, about 25 minutes.
    7. Remove from oven once cooked but DO NOT remove them from baking sheet until cool - They will crumble.
    8. Once cooled, melt chocolate over a pan of boiling water or in microwave and pour over cookies in thin lines.

    These cookies are" TO DIE FOR" said my husband. My family polished them all off before I even got chance to melt the chocolate to drizzle over them!!! I cannot tolerate cow dairy products or gluten, so used gluten-free flour, goat's butter and sweetened soya milk. I was a little worried that the strong flavour of the goat's butter might over-power the other ingredients, but it didn't. I am toying with the idea of using honey instead of the syrup in my next batch...which will hopefully not be eaten BEFORE they are drizzled in chocolate!!
