Gooseberry cake
An alternative to gooseberry crumble. Stir up a quick cake with tart gooseberries and fragrant cinnamon.
Ingredients
Serves: 10
- 125g caster sugar
- 250g plain flour
- 4 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 50g butter
- 350g gooseberries
- 1 egg
- 100ml milk

Ready in:1hr
- Preheat oven to 170 C / Gas 3. Line a 23cm cake tin.
- Mix all the ingredients together, ensuring the gooseberries are well crushed. Tip into the cake tin.
- Bake for 45 minutes, or until cooked - it should be moist.

An alternative to normal gooseberry recipes. I've only made it once and found it a little wet. - 30 Mar 2012
Very easy to make and delicious with icecream. I used a loaf tin and found it needed at least 60 mins baking as it was slow to cook in the centre. - 26 Jul 2016
Very quick and easy to make, I just threw it all in the food processor then added the gooseberries. Served it whilst warm with a scoop of vanilla ice cream - lovely - 10 Aug 2013
