Really easy blueberry muffins

    Really easy, really tasty blueberry muffins and I hope you'll enjoy them as much as we do. Quick and easy to make!

    Makes: 12 muffins

    • 310g self raising flour
    • 200g (7 oz) caster sugar
    • 1 teaspoon baking powder
    • 1 egg
    • 110ml vegetable oil
    • 110ml full fat milk
    • 1 teaspoon vanilla extract
    • 300g blueberries

    Prep:15min  ›  Cook:35min  ›  Extra time:15min cooling  ›  Ready in:1hr5min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Put flour, sugar and baking powder into a large mixing bowl. Make a well in the centre and add the egg, oil, milk and vanilla. Mix until just moistened, then fold in the blueberries.
    3. Put 12 muffin cases into a muffin tray and put a scoop into each case.
    4. Place into the oven and bake for 30 to 35 minutes or until golden brown. Allow to cool for 10 to 15 minutes once out of the oven.

    Easy to do and for my 3yo son to help, just chuck all ingredients in together (my kind of baking!). Tasted good, not too sweet like some can be. I sprinkled cinammon on top as well  -  01 Aug 2015

    I've made these a couple of times now - lovely easy recipe and great results. The first time I made them the mixture was a bit dry - I just added a little milk, and they came out lovely. Thanks for the recipe  -  03 Jul 2016
