    Makes: 30 cookies

    • 500g butter or margerine
    • 250g golden granulated sugar
    • 2 teaspoons vanilla extract
    • 2 teaspoons ground cinnamon
    • 250g oats
    • 800g plain flour

    1. Cream the butter and sugar until light and fluffy. Add the vanilla and cinnamon. Gradually add the oats and sift in the flour. Mix together to form a dough-like consistency.
    2. Place dough in fridge to cool for 25 to 30 minutes and preheat oven to 200 C / Gas 6.
    3. Flour and sugar a clean surface, rolling pin and your hands. Knead the dough and roll out with the rolling pin to even out the texture.
    4. Using a cookie cutter, cut out shapes. Grease and flour a baking tray. Place shapes on on tray and bake for 15 to 20 minutes, until lightly golden brown.
    5. Remove from oven and allowed to cool.
    6. Sit back and enjoy!


    If dough is too soft, add more flour, until you get the right consistency.


    You can either roll the dough to form 1/2 inch thick cookies or 1cm thick cookies.
