About this recipe: A no-fuss, delicious midweek meal which is easy to scale up for more people. Can be served up alongside simple steamed vegetables or something more impressive for a dinner party or special occasion.

Serves: 2 

  • 2 portions cod or other white fish
  • 200g mature Cheddar cheese
  • 4 teaspoons mustard powder

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Preheat the oven to 180 C / Gas 4. Check the fish over for bones, place in a baking tray.
  2. Grate the Cheddar and mix with the mustard powder.
  3. Spread the cheesy mix over the fish and place in the oven at 180 C / Gas 4 for about 20 minutes, until the cheese is golden and bubbling and the fish flakes easily.

To serve

Serve with a selection of steamed vegetables and either mixed savoury rice or some mashed potato.

Very quick and easy to prepare and we enjoyed it very much. Took a bit longer than twenty minutes to cook but the fish was fairly thick. Will make again but will try less expensive fish next time. - 22 Mar 2013
