Mushrooms on toast

    Delicious mushrooms on toast with a drizzle of extra virgin olive oil. This makes a lovely vegetarian tapas or starter.

    Serves: 4 

    • 4 large flat mushrooms, wiped
    • 2 tablespoons extra virgin olive oil
    • cracked black pepper
    • 4 thick slices crusty bread
    • 4 teaspoons Dijon mustard
    • watercress to serve

    1. Slice mushrooms thickly on the slant across the cap. Heat oil in a pan and fry slices of mushroom on both sides add a good few turns of cracked black pepper.
    2. Toast four thick slices of crusty bread and spread with Dijon mustard. Stack mushroom slices on top and pour over pan juices. Serve with watercress.

    I couldn't remember if Dijon mustard was the kind that I liked so I gave this recipe a try. Turns out I hate Dijon mustard, but the mushrooms on a garlic baguette were tasty.  -  22 Sep 2012
