About this recipe: This chicken wing recipe is very famous in Philippines where it is called caldereta. Serve hot with white rice.

Serves: 5 

  • 10 chicken wings
  • 1 (400g) tin chopped tomatoes
  • 1 (400g) tin fried onion
  • 8 cloves minced garlic
  • 1 green chilli, chopped
  • 1 tin liver spread
  • 5 tablespoons soy sauce
  • 5 tablespoons oyster sauce
  • salt and pepper to taste
  • 3 tablespoons tomato puree
  • 2 tablespoons honey or sugar
  • 475ml water
  • 2 large potatoes, peeled and diced
  • 2 large carrots, diced
  • 1/2 red pepper, julienned
  • 1/2 green pepper, julienned
  • 150g grated Cheddar cheese
  • 1 tablespoon smooth peanut butter

  1. Combine the chicken wings with the tomatoes, onion, garlic, chilli, liver spread, soy sauce, oyster sauce, salt, pepper, tomato puree and honey or sugar. Toss to coat and marinate for 5 hours in the fridge.
  2. Heat a large frying pan or wok. Add the chicken wings and marinade. Add water and simmer for 20 to 30 minutes, then add the potatoes, carrots, peppers, cheese and peanut butter. Simmer for a further 5 to 10 minutes, until potatoes are tender.
