Delicious broccoli and carrots omelette

    Does your toddler eat eggs? No? Or broccoli? Do your family have enough iron in it's diet? Well, this omelette will solve these problems very easy, because besides being a healthy and quick dinner, it's heavenly delicious!

    Serves: 4 

    • 1 head broccoli, broken into florets
    • 6 free range eggs
    • 150 ml milk
    • 50g butter
    • 1 big carrot, shredded
    • 50 to 100g Cheddar cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. Steam the broccoli florets for 5 minutes or until they are tender but still bright green (the water have to be boiling when you add the broccoli to steam). Remove from heat.
    3. In a bowl, whisk the eggs and milk.
    4. In a baking dish, slice the butter in pieces and place at the bottom, then add the steamed broccoli florets and shredded carrot, then pour the egg mixture on top.
    5. Shred the cheese on top of everything.
    6. Bake on the top shelf of the preheated oven until golden, about 15 minutes.
