Starting with a clean and cold metallic or glass bowl, beat the cream until soft peaks form. Add the sugar and beat until stiff peaks form, but don't overdo it as the cream will become lumpy and butter-like if you over-beat.
Serve as is, or add either the vanilla, amaretto or lemon zest for flavouring.
