Easy spicy butternut squash soup

    This soup is quick, easy and has a lovely kick. Serve with some crusty bread - yummy! - and the chilli flakes give it a real kick.

    Serves: 8 

    • 1 teaspoon oil
    • 1 clove garlic
    • 1 teaspoon dried chilli flakes
    • 1 red onion, sliced
    • 1 butternut squash, peeled and chopped
    • 1 yellow pepper, chopped
    • 3 carrots, peeled and chopped
    • 2 vegetable stock cubes

    1. Put oil in large stock pot, add garlic and chilli flakes and fry for 5 minutes. Add sliced red onions and fry until they start to soften.
    2. When onions have softened, add squash, yellow pepper and carrots to pot, along with enough water to cover and 2 stock cubes.
    3. Bring to boil and then simmer until all vegetables are soft. Remove from heat and blend all together.
