About this recipe: Celebrate Pancake Day with award winning Californian brand Barefoot Wine. Barefoot's moreish Moscato Pancakes are an adult take on the nation's favourite treat, serve with a glass of Barefoot Moscato for the ultimate indulgence.

Makes: 8 pancakes

  • 1 bottle of Barefoot Moscato
  • 1 box add water pancake mix
  • 1 punnet fresh strawberries, hulled and sliced
  • icing sugar

  1. Substitute Barefoot Moscato for water in ratio to pancake mix, and cook to instructions.
  2. Slice strawberries and soak in 225ml of Moscato. Drain before use. No need for syrup, as pancakes are deliciously sweet from the wine.
  3. Top fresh pancakes with icing sugar and strawberries.


Using a large whisk will ensure more air to be whipped into the batter resulting in light and fluffy pancakes.
Don’t let you batter sit too long, the flour will absorb too much liquid and thicken the mixture.
Make sure the pan is very hot, this is so the mixture sets as soon as it hits the surface.
Whatever size pan you use, you want the batter to be about 2mm thick in the bottom of the pan – so it coats it but you can’t see through it.
Clean the frying pan out with a little kitchen roll, and add more butter each time – you’re less likely to get burnt bits that way.
