    About this recipe: Aubergine puree, made with lots of aubergine and flavoured with chilli, spring onion, ginger, soy sauce, sherry and more.

    Ingredients
    Serves: 20 

    • 2 whole aubergines
    • 1 pinch salt and pepper
    • 1 teaspoon ground ginger
    • 8 spring onions
    • 1 small chilli
    • 5 tablespoons brown soft sugar
    • 5 tablespoons soy sauce
    • 2 tablespoons sherry
    • 1 tablespoon sesame oil
    • 1 tablespoon coriander oil
    • 4 tablespoons natural yoghurt
    • 2 cloves garlic

    Method

    1. Preheat the oven to 200 C / Gas 6. Cut aubergines in half and score in a criss cross pattern and season with salt and pepper.
    2. Roast aubergines in the oven until soft.
    3. When cooked, scoop the aubergine flesh from the skin and place in blender. Discard the skin.
    4. Add all other ingredients and blend thoroughly.
    5. Pass through a fine sieve to complete, if desired.
