Fresh asparagus mousse

    Asparagus mousse - an easy and unique starter or party nibble to make when asparagus is fresh and in season.

    Serves: 6 

    • 500g asparagus spears
    • 1 onion
    • 1 clove garlic
    • 2 sprigs thyme
    • 1L stock
    • 1 pinch coarse salt
    • 4 gelatine leaves

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Cook asparagus and all ingredients in stock; while cooking soften gelatine leaves in cold water and add to recipe.
    2. When cooked blend together well.
    3. Add to cling film-lined mould to chill and set.
