About this recipe: I had sliced apples leftovers, and I decided to assemble a fast cake that would be good for breakfast. Came out pretty well!

    Ingredients
    Serves: 4

    • 125g plain flour
    • 100g caster sugar
    • 160ml buttermilk
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1 egg
    • 1 apple (or other fruit), sliced

    Method
    Prep:5min  ›  Cook:30min  ›  Ready in:35min

    1. Pre-heat the oven to 180 C / Gas 4.
    2. Mix the flour, sugar, buttermilk, baking powder, nutmeg, cinnamon and egg together with a spatula until homogeneous.
    3. Add the sliced fruit to the mixture and stir. You may also put the slices on the bottom of the baking tin and pour the mixture over them.
    4. Pour mixture in a baking tin (I used a plum-cake tin), put in the oven and bake for 30 minutes, or until the cake tests done in the centre with a wooden skewer. When ready, take out of the oven, turn the cake upside-down on a frill and let cool.

Is it supposed to be like a batter pudding? It would also be better if we had been given a size of cake tin. - 03 Nov 2013
