Crab stuffed peppers

    A simple, healthy and adaptable snack, red peppers are stuffed with capers, basil, gherkins and cannelini beans.

    • 3 red peppers
    • 1 pack Seafood & Eat® It Brown Crab
    • 1 pickled gherkin
    • 1 teaspoon capers
    • handful basil leaves
    • lemon juice to taste
    • 1 tin cannelini beans

    1. Preheat the oven to 190 C / Gas 5.
    2. Blitz 1 red pepper with the crab, gherkin, capers, basil and lemon juice until till you've reached an even texture.
    3. Roughly mash the beans and mix with the crab mixture. Stuff the mix into the 2 remaining peppers. Place the peppers on a baking tray.
    4. Bake in the preheated oven until heated through, about 10 minutes.

    Was really disappointed as the recipe sounds fantastic. Unfortunately it was very bland. My husband asked me if it had been through a flavour separator!!!!  -  24 Jan 2014
