Steph's white chocolate and ginger cheesecake

    Melt in the mouth cheesecake with a ginger biscuit base. Very tasty! And it's a no bake recipe, too!

    Serves: 8 

    • 200g gingernut biscuit crumbs
    • 50g butter, melted
    • 400g Philadelphia® original cream cheese, softened
    • 150g caster sugar
    • 2tbs gelatine, dissolved in 50ml boiling water, cooled
    • 200g white chocolate, melted
    • 200g cream, lightly whipped
    • ground ginger

    1. Combine the biscuit crumbs and butter and press into greased 20cm springform tin.
    2. Beat the Philly and sugar together until smooth.
    3. Stir in the gelatine mixture and chocolate until smooth then fold in the cream.
    4. Pour into the prepared base and refrigerate for 3 hours then dust with ground ginger to decorate.
