About this recipe:This baked salmon recipe is easy but impressive, and utterly delicious. Salmon fillets are topped with butter, lemon, rosemary and garlic, then with Parmesan rosemary breadcrumbs, and baked till golden.
4 (120g) salmon fillets
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice
2 teaspoons minced fresh rosemary
1 clove garlic, minced
4 tablespoons dried breadcrumbs
4 tablespoons grated Parmesan cheese

Preheat the oven to 200 C / Gas 6. Lightly grease a roasting tin. Arrange salmon fillets in tin and sprinkle with salt and pepper.
In a small saucepan over low heat, melt the butter. Add the lemon juice, 1 teaspoon of the rosemary and the garlic. Bring to a simmer and cook for 3 minutes. Remove from heat and drizzle evenly over the salmon.
Combine the breadcrumbs, Parmesan cheese and remaining rosemary. Sprinkle on top of the salmon.
Bake for 15 to 20 minutes, or until salmon flakes easily with a fork and top is golden brown.
