A fresh sweetcorn and avocado salad tossed with a zesty lime dressing. Easy to do, this makes a lovely summer starter.

Ingredients
Serves: 4
170g frozen sweetcorn kernels
120ml water
1 pinch salt
1 ripe avocado, diced
1 large tomato, diced
2 spring onions, chopped
15g fresh coriander, chopped
Lime dressing
3 tablespoons olive oil
1 1/2 tablespoons fresh lime juice
1 clove garlic, crushed
1/2 teaspoon Dijon mustard
1 pinch salt
1 pinch black pepper

In a medium saucepan, combine the frozen sweetcorn and water, season with salt. Bring to the boil, cover, and simmer about 7 minutes, until sweetcorn is tender. Drain and set aside to cool.
Meanwhile, make the dressing. Whisk together the olive oil, lime juice, garlic, mustard, salt and pepper. Let the garlic hang out in the dressing until ready to use.
After the sweetcorn is cooled, toss together the sweetcorn, tomato, avocado, spring onions and coriander. Pour in dressing and toss again. Chill until ready to serve.
