    Serves: 15 

    • 250g plain flour
    • 1 teaspoon bicarbonate of soda
    • 225g mashed ripe bananas
    • 3 tablespoons soured cream
    • 200g caster sugar
    • 110g butter or margarine
    • 2 eggs
    • 120g chopped walnuts (optional)

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g (2 lb) loaf tin.
    2. In a medium bowl, stir together the flour and bicarb. In a small bowl, thoroughly combine the mashed bananas and soured cream.
    3. In large bowl, cream together the sugar and butter. Add eggs and banana mixture and mix well. Fold in flour mixture and nuts.
    4. Pour into prepared tin and bake for 55 to 60 minutes, or until a skewer inserted in the middle comes out clean.

    I am the world's worst cook, but I had some ripe bananas and thought I'd give this a go. Recipes that are easy to everyone else, usually turn out disastrously for me, but not this one. What can I say, other than this is amazing! It was absolutely delicious.  -  18 Jun 2016
