About this recipe: These cherry scones are traditional, quick and simple. You can use other dried fruits in place of cherries.

Serves: 8

  • 300g self raising flour
  • 75g sugar
  • 75g block margarine
  • 1 teaspoon baking powder
  • 75g dried cherries
  • 200ml milk
  • 2 tablespoons melted butter

Prep:15min  ›  Cook:30min  ›  Extra time:3min cooling  ›  Ready in:48min

  1. First add the whole 300g of self raising flour into a large mixing bowl followed with 75g of block margarine. Rub together with your fingers until it goes crumbly.
  2. Add the 75g of sugar, then baking powder and finally the dried fruit. Slowly add half of the milk, stir to combine. Add the rest of the milk and stir until just combined.
  3. Gently roll out the mixture on a floured work surface, being careful to not over-handle the dough.
  4. Cut out circles with a pastry cutter and place scones on a greased baking tray. Brush the tops with melted butter.
  5. Bake scones in a preheated 220 C / Gas 7 oven for 10 to 15 minutes

Use block margarine so the mixture doesn't go sticky.

I tried this recipe and it is extremely disappointing. The measurements, times, and instructions are poor and results were well below my usual standard for scones. i will not use this again. - 10 Mar 2012
