About this recipe: Smashingly delicious and easy--and inexpensive, because there's less cream that makes the same amount.

Makes: 2 quarts

  • 16 marshmallows
  • 200g crushed peppermints
  • 240ml boiling water
  • 240ml double cream
  • 240ml single cream

  1. Melt in "double-boiler" (a 2-pintish glass or metal bowl) the marshmallows, crushed peppermints and boiling water.* Chill in same bowl.
  2. Whip the double cream to peaks and stir in single cream; fold into the bowl of chilled syrup.
  3. Freeze 2 hours. Beat and then cover with plastic, pressing to the surface of the stuff and up the sides of the bowl. Freeze hard: 4-5 hours or longer.


*If you use miniature ones, use 208 & cook 1 minute after completely melted.
