Mami's chocolate cake

    Just a good ol' chocolate cake that my Mum has baked since I was diddy and taught me to bake. I've been baking this cake since I was about 4 and it's one of my favourites (:

    Serves: 10 

    • 170g (6oz) caster sugar
    • 170g (6oz) margarine
    • 3 eggs
    • 155g (5 1/2oz) self-raising flour
    • 1 teaspoon baking powder
    • 30g (1oz) cocoa powder

    1. Preheat the oven to 190 C / Gas 5. Grease 2 sandwich tins.
    2. Cream the sugar and margarine until it is light and fluffy. Then beat the eggs in thoroughly.
    3. Fold in the flour, baking powder and cocoa powder with a metal spoon until mixed. Do not over mix as you will knock the air out and it might not rise. Pour into the tins.
    4. Bake in the preheated oven until you can lightly touch the centre and it will not cave and be firm and bounce back up about 20 minutes.
    5. Leave to cool on a wire rack with a teatowel over the top and when cooled slide a knife around the edge and flip out. Add filling.
