300g vegetables: peppers, tomatoes, mushrooms and aubergine, chopped

Preheat the oven to 200 C / Gas 6. Wash the meat with some cold water and cut it in cubes.
Cut the vegetables as small or big as you want and put them in an oven tray with the meat and a pinch of salt and pepper and oil, if using. Mix the pork stock cube with a mug of warm water and pour it in with the meat. Cover the tray with aluminum foil.
Bake in the preheated oven for an hour. Remove the foil after 40 minutes. After you take it out of the oven, sprinkle the parsley and mix everything together.
