About this recipe: A tasty and easy to make recipe, with pork, potatoes, carrots and other vegetables of your choice, baked together.

Serves: 4 

  • 2 pork chops, cubed
  • 3 potatoes, chopped
  • 5 carrots, chopped
  • 1 onion or 3 spring onions
  • 300g vegetables: peppers, tomatoes, mushrooms and aubergine, chopped
  • salt and pepper to taste
  • 2 tablespoons oil (if the meat has fat on it don't use the oil)
  • 1 pork stock cube
  • parsley

  1. Preheat the oven to 200 C / Gas 6. Wash the meat with some cold water and cut it in cubes.
  2. Cut the vegetables as small or big as you want and put them in an oven tray with the meat and a pinch of salt and pepper and oil, if using. Mix the pork stock cube with a mug of warm water and pour it in with the meat. Cover the tray with aluminum foil.
  3. Bake in the preheated oven for an hour. Remove the foil after 40 minutes. After you take it out of the oven, sprinkle the parsley and mix everything together.
