Baked chicken with garlic and lemon

    The quantity of sauce with this would easily cover another chicken breast and serve 3. Despite the quantity of garlic used I did not find this overpowered the recipe. This is based on a Weight Watcher recipe. It would work well served with potato wedges.

    Serves: 2 

    • 1 leek
    • 1 large red onion
    • 10 garlic cloves
    • oil or low fat spray for frying
    • 1/2 lemon
    • 2 chicken breast fillets
    • 100ml chicken stock
    • 1 tablespoon tomato puree
    • 2 teaspoons honey

    1. Preheat the oven to 190 C / Gas 5.
    2. Slice leek into 4cm lengths and the onion into wedges. Peel garlic cloves and slice in half.
    3. Fry leeks, onion and garlic until soft and put into an ovenproof dish.
    4. Cut lemon into wedges and put in onion mixture in dish.
    5. Fry chicken breast on both sides for a couple of minutes (I used George Foreman grill) and put on top of onion mixture.
    6. Mix stock, puree and honey together and pour over chicken.
    7. Bake in the preheated oven until the chicken is no longer pink at the centre, about 45 minutes.

    Wow. You must try this recipe. My husband said, and I quote, "that was utterly delicious!" I normally make something well once and next time it doesn't quite work but that has not happened with this one! 2 months later it has become a weekly dish for us served with Actifry chips and garlic roasted vine tomatoes.  -  02 Sep 2015
