Raspberry ruffle bars

    Traybake version of the chocolate bar similar to a Bounty® in texture, but with raspberry and coconut inside.

    Serves: 12 

    • 170g (6oz) grated coconut
    • 1 packet raspberry jelly crystals
    • 60g (2oz) icing sugar
    • 1 small tin condensed milk
    • 1 large bar plain chocolate

    Prep:10min  ›  Cook:20min  ›  Extra time:1hr chilling  ›  Ready in:1hr30min 

    1. Mix together the coconut, jelly crystals, icing sugar and condensed milk, then spread the mixture in a greaseproof tin and put in fridge to set.
    2. Melt chocolate and pour over mixture and then leave to set in fridge again.
    3. Once solid, turn out and cut into squares.

    Tried this recipe but instead of making into bars I rolled mixture into small balls and covered in dark chocolate. Made about 40 chocolates. Lovely, enjoyed by all the family.  -  08 Nov 2012


    Do I have to add water (as specified on the jelly crystal packet) to the crystals before adding to the condensed milk and icing sugar or do I just pour the crystal in neat?  -  24 Jul 2015
