Healthy spinach omelette

    This healthy spinach omelette is very easy to make, healthy and delicious! Great way to use eggs for dinner!

    Serves: 2 

    • 180g pork
    • salt and black pepper to taste
    • 1 glug olive oil
    • 2 eggs
    • 3 tablespoons milk
    • 20g baby spinach, torn
    • 50g grated cheese

    1. Cut the pork into small pieces. Flavour them with salt and pepper and pan fry in a little olive oil for about 10 minutes or until the meat looks nice and golden brown.
    2. Beat eggs in a small bowl and add milk. Stir. Season with salt and pepper. Add grated cheese.
    3. Cook all ingredients in the frying pan over low heat until the eggs are cooked.
    4. Serve with fresh spinach. Sprinkle with salt and pepper (optional) and add a bit of olive oil.


    For the pork in this recipe, use any pork you might have to hand - though lean pork will be healthiest. Back bacon, streaky bacon, pancetta, lardons, ham, even minced pork will work a treat. If your pork is fatty, you may need to drain excess fat from the pan before adding the egg mixture.


    Serve with fresh spinach as stated in the recipe, or finely chop the spinach and add to the pan just when you're about finished cooking the pork. The spinach will take on some of the flavour from the pork, and you can then incorporate it into the omelette.
