This healthy spinach omelette is very easy to make, healthy and delicious! Great way to use eggs for dinner!
For the pork in this recipe, use any pork you might have to hand - though lean pork will be healthiest. Back bacon, streaky bacon, pancetta, lardons, ham, even minced pork will work a treat. If your pork is fatty, you may need to drain excess fat from the pan before adding the egg mixture.
Serve with fresh spinach as stated in the recipe, or finely chop the spinach and add to the pan just when you're about finished cooking the pork. The spinach will take on some of the flavour from the pork, and you can then incorporate it into the omelette.
