Banana and walnut loaf

    A quick and easy cake to make. It has very little sugar, so it's good for those on a sugar restricted diet.

    Serves: 8 

    • 170g (6 oz) plain flour
    • 60g (2 oz) cornflour
    • 2 teaspoons baking powder
    • 1/4 teaspoon ground cinnamon
    • 110g (4 oz) butter or margarine
    • 2 medium bananas, mashed
    • 2 tablespoons runny honey
    • 60g (2 oz) golden caster sugar
    • 1 lemon, zested
    • 2 medium eggs
    • 40g (1 1/2 oz) chopped walnuts

    1. Preheat the oven to 170 C / Gas 3. Line a 900g loaf tin.
    2. Mix the flours, baking powder and cinnamon together. Rub in the butter or margarine until it resembles fine breadcrumbs.
    3. Combine the bananas, honey, golden caster sugar, lemon zest and eggs together and then mix that into the flour mixture. Keep beating together until fully incorporated. Now add in the walnuts. Tip into the loaf tin.
    4. Bake on the middle shelf for approximately 1 hour. Allow to cool for 10 minutes in the tin before turning out onto a wire rack.

    Use for leftovers

    Can be used for French toast for a decadent Sunday brunch. Just soak in an egg and milk mixture as for normal French toast and serve with bacon and maple syrup. Yummy.

    It is lovely, Used bananas that had seen better days. Spelt Flour instead of the plain flour and Potato flour instead of the corn. plus I used some mixed peel instead of the lemon zest.  -  20 Apr 2014
