About this recipe: Eight main ingredients for this spicy meal: beef, pork, lamb, prawns, peas, sweetcorn, cashew nuts and pineapple. Leftovers taste great on baked potatoes.

Serves: 5 

  • 1 large onion, roughly chopped
  • 1 tablespoon olive oil, or as needed
  • 450g diced pork
  • 170g diced beef
  • 110g diced lamb
  • 1 clove garlic, crushed
  • 3 tablespoons Madras curry paste
  • 240ml water
  • 130g minted peas
  • 70g sweetcorn
  • a handful unsalted cashew nuts
  • 1 small tin pineapple chunks
  • a handful small prawns, cooked

Prep:10min  ›  Cook:1hr  ›  Ready in:1hr10min 

  1. Fry onions in olive oil until softened; add pork, beef and lamb and fry until browned. Add crushed garlic.
  2. Add curry paste and water and simmer for 10 minutes.
  3. Stir in peas, sweetcorn, cashew nuts and pineapple. Continue to simmer. Finally add prawns before serving on a bed of rice.
