Carne con papas y ejote (Meat with potatoes and green beans)

    My mom always made this when I was growing up. Now my family loves it and for me it's my favourite comfort food. Served with refried beans and warm flour tortillas, it is satisfying and delicious!

    Serves: 6 

    • 450g (1 lb) beef mince
    • 1/2 small onion, chopped
    • 3 potatoes, diced into bite-size pieces
    • 225g (8oz) fresh or frozen green beans
    • 225g (8oz) passata
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 225ml (8 fl oz) water
    • To serve
    • 1 tin refried beans, heated
    • jarred jalapenos
    • grated Cheddar cheese
    • flour tortillas

    1. Brown beef in a frying pan, crumble with spoon, about 10 minutes. Add onion and cook with meat till softened, about 5 minutes.
    2. Add diced potatoes, green beans, passata, spices and water, stir together. Add a little more water if needed to cover mixture.
    3. Lower heat, cover and simmer 20 to 30 minutes or until potatoes are tender. Taste and add more spices if needed. Heat a tin of refried beans and serve a spoonful of beans as a side. Top beef mixture with grated Cheddar cheese and pickled jalapenos, serve with warm flour tortillas. Enjoy!

    Cook's note

    We like lots of pepper. You can adjust any of the spices to your taste.
