    About this recipe: Amazingly tasty! I served mine with a bit of store bought whipped cream on top. DELICIOUS!! This can be made with cocoa for a chocolate sponge.

    • 250g self-raising flour
    • 2 eggs
    • 200g caster sugar
    • 1 tablespoon vanilla extract
    • 5 tablespoons cocoa powder (optional)
    • reasonable amount milk (optional)

    Prep:20min  ›  Cook:25min  ›  Extra time:10min cooling  ›  Ready in:55min 

    1. Preheat the oven to 180 C / Gas 4. Line a 23cm cake tin with baking parchment.
    2. Sift the flour into a mixing bowl. Add the eggs to the flour and mix thoroughly.
    3. Add the caster sugar slowly and stir until mixture is together.
    4. Add the vanilla extract or if you want it slightly chocolaty, then add the cocoa powder instead. Tip into the cake tin.
    5. Bake till golden brown. Test after 20 minutes and stick in a match stick and see if it comes out clean.
    6. After you take it out, then leave it to cool for around 10 minutes.

    Make it healthier

    Use a type of fruit instead of cocoa powder or vanilla extract.
