About this recipe: This is a simple and quick panini. Make in a panini press or under the grill.

Serves: 1 

  • 1 small ciabatta loaf
  • 2 teaspoons basil pesto
  • 2 slices of cheese (mozzarella is best, but Cheddar will do)

Prep:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Cut the ciabatta loaf in half and spread the cut sides with the pesto. Add the sliced cheese and sandwich together. Place in a preheated panini press until crisp and golden, about 5 minutes. Alternatively, place under a preheated grill for 3 to 5 minutes.
