This is a simple and quick panini. Make in a panini press or under the grill.

1 small ciabatta loaf
2 teaspoons basil pesto
2 slices of cheese (mozzarella is best, but Cheddar will do)

Cut the ciabatta loaf in half and spread the cut sides with the pesto. Add the sliced cheese and sandwich together. Place in a preheated panini press until crisp and golden, about 5 minutes. Alternatively, place under a preheated grill for 3 to 5 minutes.
