About this recipe: This is delicious! I was really shocked when I tasted the flavours, plus it's a great meal for weight loss!

Serves: 3 

  • 1 large onion
  • 5 garlic cloves
  • 2 teaspoons olive oil
  • 2 tins boneless sardines in sunflower oil
  • 1 tin chopped tomotoes
  • 1 vegetable stock cube
  • basmati rice
  • water as needed
  • black pepper to taste

Prep:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Cut the onion and garlic into small pieces and fry in the oil for 5 to 6 minutes.
  2. Add the sardines into the pan and break up so in smaller pieces.
  3. Add the chopped tomatoes to the pan along with a crumbled stock cube. Add a little water if the consistency is too thick.
  4. Whilst cooking the sardines on a low heat, prepare the rice by rinsing first, then add it to a pan of lightly salted boiling water.
  5. Cook rice and sardines for 15 to 20 minutes. Drain the rice and serve the sardines on top off the rice with plenty of black pepper.

This meal should in my opinion be enlisted inside the next simplified cooking manual. The similarities of method will guarantee all continents & islands worldwide will grasp and feel affiliated. This works well as a light lunch and of course UK living deserves a well made supper. Without spitting superlatives you find yourself divinely touched by the aroma. What stopped me from giving this a 5star is purely based on my hunger for a second helping once I had digested. All in all mummy can have a break from 15minute pizzas to a satisfying agreement of a healthy heart. - 18 May 2013
