Soft cheese sponge cake

This is a soft cheese sponge cake: just simply substitute the butter for soft cheese (I used chocolate Philly®) and Voila! a moist sponge cake!

- 170g (6oz) self-raising flour
- 110g (4oz) caster sugar
- 110g (4oz) soft cheese
- 2 eggs
- 4 tablespoons water

- Preheat the oven to 180 C / Gas 4.
- Add all of the ingredients into one bowl and mix. It will become very sticky so just add more water or milk if you need to. Spoon the mixture into a lined cake tin.
- Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 22 minutes.
