Carrot and cinnamon loaf cake

    A very moist and sweet loaf cake made with grated carrots, cinnamon, ginger and cloves that you can have for dessert or a light snack.

    Serves: 15 

    • 250g plain flour
    • 200g caster sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 240ml milk
    • 2 eggs
    • 120ml rapeseed oil
    • 150g grated carrot

    1. Preheat the oven to 180 C / Gas 4. Grease a 23cm by 12cm by 7cm loaf pan and set aside.
    2. Combine dry ingredients in a bowl and set aside for later use.
    3. Pour milk, eggs and oil into a large mixing bowl and stir with a whisk until well combined.
    4. Add dry ingredients slowly to the egg mixture and stir until batter is creamy and smooth.
    5. Stir in the grated carrots and mix just until incorporated into the batter. Pour mixture into greased loaf pan.
    6. Bake in oven until loaf tests done when a toothpick inserted in the center of the loaf comes out clean, about 1 1/2 hours.
