About this recipe: A wide variety of South African apples and pears are available in UK supermarkets from February through until October.

  • 2 South African Granny Smith apples, cut into thin wedges
  • 2 South African Forelle pears, cut into thin wedges
  • 1/2 lemon, juiced
  • 200g mixed salad leaves
  • 100g baby spinach leaves
  • 200g feta cheese, crumbled
  • 60g walnut halves, toasted and coarsely chopped
  • 2 beetroots - scrubbed, peeled and cut into matchsticks
  • For the dressing
  • 2 tablespoons walnut oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon thyme, finely chopped
  • 1/2 garlic clove, crushed
  • 1 pinch caster sugar
  • salt and pepper to taste

  1. Toss the apple and pear wedges in the lemon juice.
  2. Combine the mixed salad leaves, baby spinach, feta cheese, walnuts and beetroot in a large bowl.
  3. For the dressing, whisk the dressing ingredients in a bowl to combine, season to taste. Drizzle the salad with the walnut and thyme dressing, toss lightly and serve immediately.
