About this recipe:
Fresh, delicious and crunchy coleslaw made with red cabbage, red onion, carrot and red pepper in a creamy dressing.
1/4 red cabbage, finely sliced
1/2 carrot, grated
1/2 red onion, sliced into half rings
1/2 red pepper (capsicum), finely sliced
3 tablespoons mayonnaise
4 tablespoons light salad cream
3 teaspoons caster sugar
salt and pepper to taste
2 tablespoons rice vinegar or white wine vinegar
- In a mixing bowl combine the vegetables.
- In a jug combine the dressing ingredients and mix well.
- Add to the vegetables and using a spoon mix in well so that all the vegetables are coated.
- Transfer to a serving dish, cover and chill until required.
Best eaten on the day - if eating the next day, ensure you mix well again as it will become more wet.
