    About this recipe: Fresh, delicious and crunchy coleslaw made with red cabbage, red onion, carrot and red pepper in a creamy dressing.

    Ingredients
    Serves: 4 

    • 1/4 red cabbage, finely sliced
    • 1/2 carrot, grated
    • 1/2 red onion, sliced into half rings
    • 1/2 red pepper (capsicum), finely sliced
    • Dressing
    • 3 tablespoons mayonnaise
    • 4 tablespoons light salad cream
    • 3 teaspoons caster sugar
    • salt and pepper to taste
    • 2 tablespoons rice vinegar or white wine vinegar

    Method

    1. In a mixing bowl combine the vegetables.
    2. In a jug combine the dressing ingredients and mix well.
    3. Add to the vegetables and using a spoon mix in well so that all the vegetables are coated.
    4. Transfer to a serving dish, cover and chill until required.

    Serving suggestion

    Best eaten on the day - if eating the next day, ensure you mix well again as it will become more wet.
