Amazing onion rings

    Suitably crunchy homemade fried onion rings. They take a bit of preparation but are certainly worth it.

    Serves: 2 

    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • ground black pepper to taste
    • 1 large onion, sliced into approx 3mm whole slices
    • 1 egg
    • 235ml milk
    • oil for deep frying
    • 180g dry breadcrumbs
    • good pinch cayenne pepper

    1. In a mixing bowl, sift the flour, baking powder, salt and black pepper. Combine well.
    2. In another mixing bowl, whisk together the egg and milk.
    3. Separate the onions carefully. Pour the egg mixture into the flour mixture and whisk in gently.
    4. Dredge the onion rings into the batter mix. Place onto a cooling rack or grill rack to drip through (add a tray under to catch the drips). Repeat with the remaining onion rings.
    5. Heat the oil to approx 180 C.
    6. On a plate add the breadcrumbs and mix in the cayenne pepper. Press the onion rings into the breadcrumbs and repeat until all onion rings used up.
    7. Carefully deep fry, a few at a time, until golden brown. Drain on absorbent paper in a bowl. Be careful not to have the oil too hot or the onion rings will burn. Allow to cool slightly, sprinkle with salt and serve hot.
