Add the potatoes, leeks and stock to the slow cooker and leave to cook for about 6 hours.
When the potatoes are soft, add in the salt and black pepper then blend everything together with a hand blender then leave to cook for another hour. You can transfer to a pan and heat it up that way for about 15 minutes on the hob if you prefer.
Serve in a bowl sprinkled with pancetta and a swirl of creme fraiche to make it look a bit fancy dancy :-)
