Slow cooker potato and leek soup

About this recipe: A lovely warm, filling soup, made in the slow cooker. It's perfect if you leave it on when you go to work or something.

Serves: 4 

  • 6 large potatoes, peeled and diced
  • 4 large leeks, diced
  • 600ml (1 pint) chicken or vegetable stock
  • 1 pinch salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons creme fraiche to serve
  • 1 tub pancetta to serve

Prep:5min  ›  Cook:6hr  ›  Ready in:6hr5min 

  1. Add the potatoes, leeks and stock to the slow cooker and leave to cook for about 6 hours.
  2. When the potatoes are soft, add in the salt and black pepper then blend everything together with a hand blender then leave to cook for another hour. You can transfer to a pan and heat it up that way for about 15 minutes on the hob if you prefer.
  3. Serve in a bowl sprinkled with pancetta and a swirl of creme fraiche to make it look a bit fancy dancy :-)

yum yum fab soup easy to make, very cheap to make and very tasty . Great idea blending it in the slow cooker then cooking it for a bit longer. X - 05 Feb 2013
