About this recipe: Light and refreshing, this starter is very simple to prepare. Better yet, it can be made well ahead of time.


Serves: 2 

  • 3 1/2 tablespoons cream cheese
  • 1 cucumber - peeled, seeded and diced
  • 1/2 lemon
  • salt and freshly ground black pepper to taste
  • 1 small bunch fresh mint leaves, finely chopped

  1. In a bowl, combine the cream cheese with cucumber and squeeze the juice of 1/2 lemon into the mixture. Season with salt and pepper to taste and stir well. Spread half of the mixture evenly into small serving glasses.
  2. Add the mint leaves to the remaining mixture and stir. Evenly distribute between the glasses.
  3. Refrigerate for at least 30 minutes before serving.
