About this recipe: A nice snack with all easy ingredients. Fills your stomach when hungry!! If you want to have it baked, you can put the saute on canapes, top with cheese and pop it in a preheated oven (150 C / Gas 2). Remove when cheese is melted.

Serves: 2 

  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 130g frozen corn nibblets
  • 2 tomatoes, diced
  • 1 small tin tomato puree or passata
  • 60ml water
  • 2 coriander leaves
  • mixed herbs
  • salt and pepper to taste
  • spices such as chilli powder (optional)
  • cheese (optional)

  1. Heat olive oil in a pan. Add onions and stir till golden brown. Then add corn and cook and stir until heated through, about 5 minutes.
  2. The corn should be cooked and then add diced tomatoes, tomato puree, and water.
  3. Top with coriander and your choice of herbs. Add salt and pepper to taste, and add chilli powder and cheese, if using. Serve hot.
