Victoria's Mini Egg cookies

    Cadbury® Mini Eggs cookies are amazing and fun to make and eat. Use a low fat margarine spread.

    Makes: 20 cookies

    • 120g Cadbury® Mini Eggs
    • 225g low fat spread
    • 180g golden caster sugar
    • 1 medium egg
    • 1 teaspoon vanilla extract
    • 225g plain flour
    • 1 teaspoon baking powder

    1. Preheat the oven to 180 C / Gas 4. Crush the mini eggs by putting them in a sealed sandwich bag and hitting them with a rolling pin.
    2. In a bowl whisk together the low fat spread and sugar until well blended, then whisk in the egg and vanilla extract.
    3. Stir in the flour and baking powder with a large metal spoon, then once combined stir in 3/4 of the mini egg pieces, saving some larger pieces for decoration.
    4. Blob dessert spoons of the mixture, evenly spaced, onto a lined baking sheet then press some of the reserved mini egg pieces into the top of each biscuit.
    5. Bake until golden but still soft in the middle, about 12 minutes.

    . didn't have any golden caster sugar so just used the normal one, they just came out light but still very delicious  -  31 Mar 2013

    . works well, I made much larger cookies and used a buttery spread to add a good flavour. Big hit in our house and the under 14s football team I bake for every home game!  -  22 Feb 2013
