Apple rhubarb compote

    This compote is delicious served over brioche or rice pudding. Rhubarb and tart apple are gently cooked and lightly sweetened.

    Serves: 6 

    • 500g rhubarb, cut into 1cm pieces
    • 500g Granny Smith apples - peeled, cored and thinly sliced
    • 100g caster sugar

    1. Combine the rhubarb, apples and sugar in a saucepan. Cook over low heat until tender, about 30 minutes.


    Adjust the sweetness with a little more sugar if you find it is too tart.
