About this recipe: I am a gluten-intolerant, peanut butter-holic and am always inventing new excuses to use it! These crumpets use the gluten-free Livewell® brand as they are by far the best GF ones on the market, in my opinion. Enjoy the contrasting textures and flavours. I often have these for breakfast or as a quick and nutritious mid-afternoon snack.
If you prefer, sprinkle each crumpet with some brown sugar instead of the honey.
I love these crumpets as well! I have only used them for my breakfast sandwiches - I cut them in half, pop in the toaster, add egg, bacon or ham, and cheese! This sounds yummy!! I'm going to try it tomorrow! Thanks for sharing! Toni - 21 Oct 2013
