Gluten-free crumpets with peanut butter and caramelised banana

    I am a gluten-intolerant, peanut butter-holic and am always inventing new excuses to use it! These crumpets use the gluten-free Livewell® brand as they are by far the best GF ones on the market, in my opinion. Enjoy the contrasting textures and flavours. I often have these for breakfast or as a quick and nutritious mid-afternoon snack.

    Serves: 2 

    • 4 gluten-free crumpets
    • 4 tablespoons no-added-sugar crunchy peanut butter (such as Wholefoods®)
    • 2 ripe bananas, mashed
    • 4 teaspoons clear honey

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Pre-heat your grill to high.
    2. Lightly toast the crumpets in the toaster just to heat them through (or lightly toast under the grill).
    3. Whilst still warm, spread each crumpet with 1 tablespoon of the peanut butter.
    4. Add a quarter of the mashed bananas to each crumpet.
    5. Top each crumpet with 1 teaspoon of the honey.
    6. Place under the grill and toast until the honey is bubbling and has turned a lovely golden colour.
    7. Enjoy whilst still hot.


    If you prefer, sprinkle each crumpet with some brown sugar instead of the honey.

    I love these crumpets as well! I have only used them for my breakfast sandwiches - I cut them in half, pop in the toaster, add egg, bacon or ham, and cheese! This sounds yummy!! I'm going to try it tomorrow! Thanks for sharing! Toni  -  21 Oct 2013
