About this recipe: Beautiful prawn filling in edible tomato 'cups'! To accompany these refreshing tomatoes with prawns, go for slices of fresh veg like cucumbers, radishes and carrots and a refreshing salad - your meal will be even better!


Serves: 4 

  • 4 large tomatoes, washed
  • 200g cooked prawns, finely chopped
  • 3 tablespoons mayonnaise
  • 1/2 lemon, juiced
  • salt and freshly ground pepper to taste
  • chopped chives, to garnish

  1. Slice off the top of each tomato and scoop out the pulp. Reserve the pulp for another use.
  2. Add prawns and mayonnaise to a bowl and squeeze lemon juice over the top; mix well. Season to taste with salt and pepper.
  3. Fill each tomato with the prawn mixture.
  4. Sprinkle chives on top of the tomatoes. Chill before serving.
