About this recipe: Refreshing, tangy and tasty, this prawn cocktail recipe can be enjoyed as a dinner party starter, light main or an alternative to the traditional prawn cocktail at Christmas. The flavours of seafood, citrus and fruit combine beautifully for a refreshing cold starter!


Serves: 4 

  • 2 Granny Smith apples, cored and finely chopped
  • 1 lemon, juiced
  • 2 grapefruits - peeled, segmented and chopped
  • 200g peeled prawns, chopped

  1. In a bowl combine the diced apples with lemon juice. Add a layer to the bottom of four serving glasses. Top with some chopped grapefruit.
  2. Combine the remaining apples and grapefruit with the prawns. Fill the glasses with the mixture till 3/4 full. Cover glasses with cling film and chill in refrigerator before serving.
